Protein is one of the first numbers many brewers look at on a malt specification sheet.
There is a good reason for that. Malt protein affects extract, enzymes, yeast nutrition and overall brewing performance. But there is a common misconception that the lowest protein malt is automatically the best malt.
It is not that simple.
Where Malt Protein Comes From
The protein level of malt starts with the barley itself.
Barley protein is affected by variety, growing conditions, soil fertility and the crop year. Maltsters then select and process barley to produce malt that fits a particular specification.
That means two crops of the same barley variety can have somewhat different protein levels.
Protein and Malt Extract
A barley kernel contains both starch and protein.
Generally, as the proportion of protein increases, there is less room in the kernel for starch. Because starch is the primary source of fermentable extract, excessive protein can reduce potential malt extract.
This is one reason brewers often prefer moderate protein levels in base malt.
But simply pushing protein as low as possible creates another problem.
Protein Is Connected to Enzymes
Many of the enzymes required during brewing are proteins.
These enzymes are responsible for breaking down starch during mashing. Malt with higher nitrogen levels often has stronger enzymatic potential, although the relationship is influenced by barley variety and the malting process.
That can be valuable when brewing with corn, rice or other adjuncts that contribute starch but little or no enzyme activity.
An all-malt brewery may not need the same level of enzymatic power. The Brewers Association has specifically noted that all-malt craft brewers often have different malt requirements than large adjunct brewers.
Protein and FAN
Protein is also connected to Free Amino Nitrogen, or FAN.
During malting and mashing, some proteins are broken into smaller nitrogen-containing compounds. Yeast uses many of these compounds as nutrients during fermentation.
Too little available nitrogen can contribute to fermentation problems. At the same time, very high residual FAN is not automatically desirable and can affect finished beer characteristics and stability.
This is another reason malt protein needs to be viewed as a balance rather than a race toward the lowest possible number.
So What Protein Level Should Brewers Want?
There is no universal answer.
The appropriate malt protein depends on:
- the barley variety
- the malt style
- the brewery’s mash program
- the amount of adjuncts being used
- enzyme requirements
- desired extract
- fermentation requirements
For a brewery making primarily all-malt beer, lower to moderate protein can support strong extract while still providing adequate enzymes and FAN.
A brewery using a large portion of adjuncts may benefit from malt with stronger nitrogen and enzyme characteristics.
Look Beyond Protein Alone
Protein is important, but it should be read alongside extract, FAN, diastatic power, friability and beta-glucan.
That combination tells you far more about brewing performance than protein alone.
When comparing base malt for brewing, don’t automatically choose the malt with the lowest protein specification. Look for a balanced malt that fits your brewing process and consistently meets the specifications your beer requires.
