Every brewery wants to get good yield from its malt.
That makes malt extract one of the most important specifications on a Certificate of Analysis. But laboratory extract and actual brewhouse efficiency are not the same thing.
Understanding the difference can help breweries evaluate malt more accurately and troubleshoot inconsistent yields.
What Is Malt Extract?
Malt extract represents the amount of soluble material that can be obtained from malt under standardized laboratory conditions.
Much of that material ultimately comes from the starch inside the barley kernel.
During mashing, enzymes convert starch into sugars and other soluble carbohydrates. Those compounds enter the wort and eventually contribute to the beer.
In simple terms, extract tells you the malt’s potential yield.
Why Protein Matters
Barley kernels have a limited amount of space.
A higher percentage of protein generally means a lower proportion of starch. Because starch drives extract yield, very high protein malt can have lower extract potential.
This is one reason maltsters pay close attention to barley protein when selecting raw material.
But again, protein should not simply be minimized. Brewers still need sufficient enzymes and yeast nutrients.
Modification Also Matters
During malting, barley is allowed to germinate under controlled conditions.
This begins breaking down the structures surrounding the starch inside the kernel. The process is known as modification.
Well-modified malt allows brewing enzymes better access to the starch during mashing.
Friability, beta-glucan and the difference between fine-grind and coarse-grind extract can all provide information about malt modification.
Laboratory Extract Is Not Brewhouse Efficiency
This distinction is important.
A laboratory measures extract under tightly controlled conditions. Your brewery does not.
Actual brewhouse efficiency depends on everything that happens between milling the malt and collecting wort.
That includes:
- mill gap and crush quality
- mash temperature
- mash pH
- water-to-grist ratio
- mash time
- lautering
- sparging
- equipment design
A malt can have excellent laboratory extract and still produce disappointing efficiency if the brewing process does not recover that extract effectively.
Milling Can Make a Big Difference
If malt is crushed too coarsely, starch can remain trapped inside larger pieces of endosperm.
If it is crushed too finely, the brewery may achieve excellent extraction but create lautering problems by damaging the husk and producing excessive flour.
The ideal crush is therefore a compromise: expose the starch while retaining enough husk structure to support an effective grain bed.
Don’t Chase Extract Alone
A malt with a slightly higher laboratory extract is not automatically the better purchase.
If another malt delivers better consistency, modification, lautering and repeatability, that can have more value in an actual production brewery.
Brewhouse efficiency is a system. Malt quality is part of that system, but so are equipment and process control.
When comparing brewing malt and malt suppliers, use extract as an important starting point, then evaluate how the malt actually performs across repeated batches.
The best result is not simply the highest number on the COA. It is predictable extract and reliable performance in your brewhouse.
